Goat Cheese Stuffed Dates
16 large Medjool dates (12 ounces)
¼ c Chevre plain fresh goat cheese (@risincreekcreamery), at room temperature
¼ c light cream cheese, at room temperature
2 T fresh chives
6 thin slices of finely chopped prosciutto
1/8 t garlic powder
1/8 t onion powder
- Preheat oven to 350 degrees.
- In a small bowl, mix goat cheese and cream cheese by hand until smooth. Add chives, prosciutto, garlic and onion powder and mix well.
- Make a slit lengthwise in each date and remove the pit. Fill each date with a heaping teaspoon of goat cheese mixture.
- Place stuffed dates on a cookie sheet and bake at 350 degrees for 8 minutes until warm and cheese is slightly gooey. Arrange on a platter and serve.
