Goat Cheese Stuffed Dates

Ingredients

  • 16 large Medjool dates (12 ounces)

  • ¼ c Chevre plain fresh goat cheese (@risincreekcreamery), at room temperature

  • ¼ c light cream cheese, at room temperature

  • 2 T fresh chives

  • 6 thin slices of finely chopped prosciutto

  • 1/8 t garlic powder

  • 1/8 t onion powder

Directions

  • Preheat oven to 350 degrees.
  • In a small bowl, mix goat cheese and cream cheese by hand until smooth. Add chives, prosciutto, garlic and onion powder and mix well.
  • Make a slit lengthwise in each date and remove the pit. Fill each date with a heaping teaspoon of goat cheese mixture.
  • Place stuffed dates on a cookie sheet and bake at 350 degrees for 8 minutes until warm and cheese is slightly gooey. Arrange on a platter and serve.
